Erica Kerrs Traditional Haggis


Ingredients (serves 6)

- 1 cleaned sheep stomach bag
- 1 lb. dry oatmeal
- 1/2 lb. lambs liver - minced
- 1/2 lb chopped mutton
- 1/2 pint of stock the heart of a sheep - minced
- 1/4 tsp.. each: salt and pepper, cayenne pepper
- 1 large chopped onion

Method
1. Toast the oatmeal slowly until it is crisp
2. mix all the ingredients (except the stomach bag) together
3. add the stock
4. Fill the bag just over half full, press out the air and sew up securely
5. Place in a large pot of boilinig water - prick haggis with needle
6. Boil for 4 - 5 hours
